Our central kitchen is the only sushi kitchen in Canada with the two highest accreditations in the industry: HACCP (Hazard Analysis and Control Critical Points) certification audited by the CFIA (Canadian Food Inspection Agency) and GFSI (Global Food Safety Initiative).  Our plant is also LEED (Leadership in Energy and Environmental Design) certified.

All our chefs have training sessions on sanitation and safety rules and regulations, and all our ingredients are carefully chosen to ensure optimal flavour and freshness for all our products.

With the help of a panel, the R&D department ensures that they choose the best recipes for each variety and that they always create new trendy products.
